I love eating. I also love eating with people, especially my family, and even more especially during the celebration of Jesus’s birth, passion and resurrection.
Christmas dinner is my highlight meal of the year. My family does a terrific job cooking delicious food and decorating the dining room table. Red, green, and white colors brighten the room, and the aroma of ham, scalloped potatoes and cranberry bread wafts through the entire house.
But I’m on a diet. A very different diet than my family’s traditional Christmas scrumptious delights. A diet that requires preparation.
A few sprigs of anice, dill and chives on a bed of arugula and baby spinach. A crown of wild-caught shrimp and organic cherry tomatoes. Sheep feta sprinkled liberally on the dish.
And voila! Before me lies a scrumptious meal bursting with Christmas color. I enjoy the healthy, beautiful array with my family.
